"Eat it with your eyes first and then prepare this great pumpkin pie"

Ingredients

  • oatmeal - 1 1/2 cup
  • wheat flour - 1/2 cup
  • nutmeg
  • cinnamon
  • margarine - 4 tbsp. (or butter)
  • honey - 1 + 2 tbsp. (or another sweetener)
  • ice water
  • pumpkin puree - 1 3/4 cups
  • avocado - 1 pc. (a little)
  • vanilla extract - 1 tsp.
  • vegetable milk - 1/4 cup

How to make

The oatmeal is put in a kitchen appliance (I used a coffee grinder) and it is grinded into not very fine flour.

Pour the oatmeal into a bowl, add the wheat flour and cinnamon and mix the dry ingredients.

Add the margarine/butter and knead with your hands to mix well, not to form large lumps and to form crumbs.

Now's the time for the sweetener.

Add little by little of the water and knead, until all of the dry ingredients are combined and a sticky dough is obtained.

In a very lightly greased baking pan, press the dough with your hands to make a thin layer on the bottom and on the walls.

Place the baking pan in the refrigerator for 20 minutes.

Then place it in a preheated oven at 350°F (175 degrees) for about 15 minutes just to lightly bake the dough.

During this time, the filling is made.

Put the pureed pumpkin, the avocado (cut into several pieces), the milk, the sweetener, the vanilla, the cinnamon and a little nutmeg in the kitchen appliance. Blend, until a homogeneous mixture is obtained.

Pour the pumpkin mixture into the baking pan and place it back into the oven for another 30-40 minutes and the last 15-20 can be only with the top resistor wire on.

When the pumpkin pie is ready (when it darkens at the edges), take it out of the oven, leave it to cool and sprinkle it with powdered sugar before serving.

The pumpkin pie with oatmeal is ready.
