To prepare 2 of these unique flourless pancakes, you only need the listed products. If desired, you can replace coconut oil with ghee.
The first step is to prepare a pancake batter and for that purpose the products are placed in a suitable container and are blended, until a homogeneous mixture is obtained. If you think the mixture is not thin enough, you can add a spoon of yogurt or a little more coconut oil.
To bake the pancakes you need a pan with a non-stick coating, which is heated on a moderately heated hob. The idea is both to bake the pancakes evenly and to have time to shape the pancake itself.
When the pan has heated well enough, apply a little coconut oil with a silicone brush and pour half of the mixture. Carefully spread the mixture.
Once the pancake is baked on the bottom, very carefully turn it over, by using a spatula and bake it on the other side. The baked pancakes can be spread with a little coconut oil, if desired. They are covered with a damp cloth and are left to stew briefly.
Puree the banana and add the finely chopped strawberries. If desired, you can flavor the filling with a few drops of lemon juice for a more intense taste. Garnish the pancakes with this fruit mixture or anything else you like and serve them.
