"They say happiness is in the little things - so these mini banana pancakes make us very, very happy"

Ingredients

  • bananas - 1
  • eggs - 2
  • yogurt - 7 oz (200 g)
  • water - 1/2 tsp.
  • baking powder - 1 tbsp (10 g)
  • fruit jelly - 1/2 jar
  • sugar - 4 tbsp.
  • flour - about 2 cups
  • oil - for spreading

How to make

Mash the banana along with the yogurt and egg. Then we add the baking powder, sugar and fruit jelly. Mash again.

To the mixture thus obtained, add the flour in parts while continuously beating with a mixer.

The mixture should become thick like a sponge cake batter.

Heat a pan and grease it with oil. Scoop out 1 tbsp. of the mixture for 1 mini pancake (I fit 4 in mine). They are baked on both sides, then I turn them with a fork.

Note: Each side should take no more than 30 seconds - the mini pancakes come out very quickly.

Serve them with honey, cream or the fruit jelly used for their mixture :)

The kids love them so much!
