How to make
Cut the tomatoes and peppers into cubes. Finely chop the garlic and hot pepper.
Cut the leeks and parsley into small pieces. In a deep frying pan heat the fat, fry the minced meat, until it's semi-cooked. Add the garlic and hot pepper and fry for 2-3 minutes.
Add the chopped tomatoes, leeks, parsley and pepper, fry for another 2-3 minutes. Season with salt and black pepper.
Fill the tortilla wraps with the stuffing, add the grated mozzarella, roll them up and bake the enchiladas in a pan.
The minced meat enchiladas are very tasty!
