Ingredients

  • minced beef - 9 oz (250 g)
  • tortillas - 2 pcs.
  • avocado - 1 pc.
  • tomatoes - 2 pcs.
  • lemon juice - 1 tbsp.
  • onion - 1/2 onion
  • red beans - 5.3 oz (150 g)
  • oil - 2 tbsp.
  • hot chili - 1/2 tsp.
  • cumin - 1/2 tsp.
  • paprika - 1/2 tsp.
  • black pepper - 1/4 tsp.
  • salt - by taste

How to make

Cut the onion into small pieces. Heat 2 tbsp. of oil in a pan on the stove at a moderate temperature and fry the onions for about 3 minutes.

Add the chili and stir for about a minute. Add the beans. Fry the beans for about 10-15 minutes.

Heat 1 tbsp. of oil in another pan and fry the minced meat, by stirring it, until it crumbles. Add the cumin, black pepper, paprika and as much salt as you like and after about a minute and a half, the tomatoes are peeled and diced.

Fry for about 15-20 minutes or until the liquid has completely evaporated. Cut the avocado and the other tomato into small pieces. Mash the avocado, season it with lemon juice and salt and add the diced tomatoes. Stir.

Heat the tortillas in a non greased pan and sprinkle them with grated yellow cheese, in order for it to melt.

Distribute the red beans into two plates.

Pour the minced meat over the tortillas and fold them in half.

Place them on the beans. Pour the avocado and tomato mixture on top of the enchiladas.

The spicy enchiladas with minced meat are very tasty.
