How to make
Chop the onions and peppers finely. Braise them until softened, then add the finely diced chicken meat. Fry until the meat is ready.
In each tortilla, put several spoons of this mixture, roll them up, arrange in an oven dish and spread with tomato sauce, sprinkle with gouda or cheese on top.
Bake the enchiladas in a preheated 390°F (200 °C) oven for about 10-15 min. Serve them warm.
