How to make
Stew the finely chopped red onion and garlic in a pan with heated fat. Add the lamb minced meat and crumble it well, until it's fried. Add the finely chopped fresh spices and season with a pinch of salt. Add the boiled in advance couscous, a pinch of cinnamon to the minced meat and leave the mixture on the hob for a few more minutes.
Cut the eggplants into slices, place them in a bowl, season them with salt and pour olive oil over them. Bake them in a preheated grill pan.
Place a small amount of couscous filling on the grilled eggplants, roll them up and serve them on a plate on top of the stuffing mixture.
