How to make
First sift the flour with the cinnamon and baking powder in a dry bowl. Mix them with the orange peel and powdered sugar. Add the grinded pumpkin, butter and orange juice to the dry ingredients.
Carefully knead a soft dough and keep in mind, that it is difficult to shape only with your fingers, so use a stirring spoon. Finally, you should get a dough, which is thicker than regular cake batter. If necessary, you can add a little more orange juice or flour to achieve the desired consistency.
Using a spoon, scoop out the dough and place in a pile on a tray lined with baking paper. Carefully spread the spoonful, until a thin cookie is obtained and it acquires the characteristic round shape.
Leave space between the cookies. From the specified amount of mixture you will get 2 trays of cookies - keep that in mind.
Bake them in a preheated oven at 360°F (180 degrees) for about 15 minutes or until a golden color is obtained.
Leave the baked cookies to cool down.
Meanwhile, melt the chocolate in a water bath. Dilute it with a little water to make it slightly thinner, it should not be too thick.
The cooled pumpkin cookies are dipped halfway in the hot chocolate, then they are carefully placed in the tray lined with baking paper. Once the chocolate has hardened, the cookies are ready to be served.
