Ingredients

  • oatmeal - 80 g
  • blueberries - 70 - 80 g (fresh)
  • egg whites - 3 pcs. (120 g)
  • yogurt - 120 g (for dietary version - skimmed)
  • baking powder - 1 tsp.
  • salt - 1 pinch
  • powdered sugar - 1 tsp. (with a tip)
  • cocoa powder - 1/2 tsp. (with a tip, 100% natural)
  • peanut butter - for spreading

How to make

The oatmeal is ground into a fine flour and mixed with the baking powder, cocoa, salt and sugar.

Beat the egg whites into a thin foamy mixture and add the yoghurt.

Pour the dry mixture in portions and mix until a homogeneous mixture is obtained.

At the end, add the whole blueberries.

Heat a non-stick pan over medium heat. If desired, the surface can be greased after each pancake to make them even juicier, but this is not necessary, as we will further soften them with peanut butter.

Bake the oatmeal pancakes on one side, until bubbles start forming, then turn them over and bake them on the other.

When the baked pancake is taken out, spread it with peanut butter.

Serve them as a healthy dessert or breakfast with maple syrup, honey, brown powdered sugar.

Another option for these oatmeal pancakes with blueberries is low-fat cream cheese with blueberry jam.
