Ingredients

  • eggs - 3 pcs. (L)
  • apples - 2 pcs. (medium - sized)
  • cornstarch - 3 tbsp.
  • almonds - 1.2 oz (35 g) peeled/raw
  • oatmeal - 2 full handfuls (sliced)
  • walnuts - 0.5 oz (15 g)
  • coconut shavings - 0.35 oz (10 g) fine
  • milk - about 3 tbsp.
  • lemon juice - 1 tbsp.
  • egg whites - 1 pc.
  • vanilla - 1 powder (0.2 g)
  • oil - or butter for frying
  • salt - 1 pinch

How to make

First, grate the apples on a fine grater and immediately pour the lemon juice over them, so that they do not darken.

Add a pinch of salt, egg whites, starch and the beaten eggs. Add the milk, vanilla, oatmeal and coconut shavings. Separately grind the almonds with the walnuts and add them to the other ingredients.

The result is a mixture, which is thicker than the mixture of ordinary pancakes.

Let the pancake mixture rest for about 20 minutes.

Heat a pan over medium heat and lightly grease it. Pour a little of the mixture and spread it out carefully.

The pancakes should not be too big, because they can break when they're turned over.

Lightly grease the pan before each pancake.

Serve the apple pancakes with jam, honey or whatever you like. Eat them while they're warm.
