Sift the flour with the baking powder. Beat the eggs with the milk and add the sugar and salt. Add the carbonated water and stir well. Begin to add the flour, while stirring constantly. Leave the pancake batter to stand for 15 minutes, until lightly risen.
Peel the apples, cut them into thin slices and put them in a bowl with water and lemon juice to prevent browning. Heat 4 1/5 cups (1 L) of oil in a pan and pour in 1 ladle of dough, let it spread on the bottom. Once the edge of the pancake becomes dry, arrange a few apple pieces on top and press them.
Immediately add a bit of dough to prevent the fruits from falling when you flip the pancake. Once the apple pancake acquires a tan, flip it over. Repeat the procedure with the remaining pancakes.
