Ingredients

  • einkorn flour - 6.7 oz (190 g)
  • baking powder - 1 tbsp (15 g)
  • eggs - 3 pcs.
  • sugar - 5.3 oz (150 g)
  • oranges - 1 pc.
  • vanilla - 1 powder (2 g)
  • matcha powder - 2/5 tsp (2 g) + for sprinkling (optional)
  • margarine - 6.35 oz (180 g)
  • salt - 1 pinch
  • honey - 3 tbsp.
  • cream cheese - 7 oz (200 g) Light (low fat)
  • sour cream - 2 tbsp.
  • seasonal fruit - 0.9 lb (400 g) apples, bananas, strawberries, pineapple, kiwi

How to make

The spelt flour, matcha powder, salt and baking powder are mixed well. To avoid lumps in the dry mixture, I recommend putting everything in a blender on medium speed. This way the flour will become finer and if there are lumps from the matcha, they will break down.

Grate only the orange part of the orange peel and mix it with the sugar. Here I once again resort to a blender to better flavor the sugar and make it finer. For this purpose, I peel the orange part of the orange into strips with the help of a vegetable peeler (it is very important that there are no white parts) and I grind it at maximum speed with the sugar.

You decide how you want to do it.

Beat the margarine with the orange sugar until a fluffy mixture is obtained. While beating at all times, add all three eggs one by one, until they are completely absorbed. The mixture will become thin, but don't worry about it.

Add the flour along with the matcha and baking powder mixed in it and beat the mixture well.

Pour the einkorn cake mixture into a greased pan with a detachable bottom, which is 20 cm in diameter.

Bake in a preheated oven at 360°F (180°C) for 30-35 minutes.

Once the cake is ready, leave it in the cake tin for 15 minutes and then detach it and take it out to cool for 2 hours on a wire rack.

Beat the cream cheese with two tablespoons of cream and one tablespoon of honey. This cream is spread on the einkorn cake, it is drizzled with another spoonful of honey and slices of various fruit (ones you have available) are arranged on top and they are drizzled with the third spoonful of honey and a little matcha if you like. For the fruit, I added apples and oranges, whose peel, I peeled earlier (it should be peeled once more to remove the white parts).

The sumptuous einkorn cake with matcha and fruit is served with tea or coffee.
