How to make
If you have quality beef, do not hesitate to prepare it according to this recipe. It does not need marinating or spices, because it is very tasty in itself and it is unnecessary and even not recommended to flavor it further. You just have to prepare it properly and the best option is to grill it.
The first important rule is that the steaks are 1.2 - 1.4″ (3 - 3.5 cm) thick, each weighing from 2 to 2.2 lb (0.9 to 1 kg). They are huge and usually one is enough for two people.
The meat must be left at room temperature for about 40 minutes to an hour. During this time, prepare the grill and make sure the meat is cooked over smoldering coals.
The grill rack is placed on the lowest level and if the grill is very highly heated, place it a bit higher.
Place the steaks on it and grill them for 5-8 minutes, turn them over and add plenty of salt on the other side with the coarse flaky salt. Cook them for the same time. Usually, it is never salted on the side that it is being cooked on, so that it doesn't dry out the meat. You can only do that if it is very tender, high quality and a special breed of animal.
When it is ready on the other side, turn it over again for just a few seconds and immediately remove it and place it on a serving platter.
The ideally grilled steak has a dark color on the outside and when cut there should be a layer of pink and red in the middle. It looks raw, but it is not. It should not be well done and the red core should not disappear, because the taste and tenderness of the meat will be lost.
Serve it immediately and eat it warm. A good side dish would be stewed vegetables or baked potatoes, as well as a fresh salad.
