Ingredients

  • bananas - 2 pcs.
  • blueberries - 4 tbsp. (fresh or whole fruit from jam)
  • flour - 3.5 oz (100 g) mixture of white and wholemeal 50/50
  • milk - 1 cup (250 ml) low - fat
  • oil - 1 tbsp. + to grease the pan
  • salt - 1 pinch

How to make

Peel the bananas and blend them with the milk. Add the flour, oil and salt to the resulting mixture and beat it well with a wire whisk.

If the mixture is too thick, add a little more milk or if it is too thin - more flour (depending on the size of the bananas).

Heat a non-stick pan over medium heat, grease it and pour the mixture and form it into a round pancake. Sprinkle a little blueberries on top and bake it, until it aquires an appetizing color on the bottom, then carefully turn it on the other side briefly.

Since there is no solder egg in the pancakes, they are delicate and silky, so the trick here is to bake them slowly. With very high heat there is a risk that they will remain very soft on the inside and fall apart when turned over.

Place the prepared banana pancakes with blueberries in a plate and cover them with foil or another plate, in order to keep them warm and soft. If desired, you can spread them with butter.

Serve them with blueberry jam, honey or caramel syrup.
