How to make
Dissolve the yeast in the slightly warmed milk and stir. You don't have to wait for it to activate at this stage.
Sift the flour into a bowl and make a well in the middle, in which you need to pour the lightly beaten egg with the sugar, vanilla, sour cream (at room temperature) and the milk with the yeast.
Knead a smooth dough in a food processor or with a mixer with the suitable attachments for dough, so that it does not stick to you. If necessary, sprinkle with more flour and add the butter little by little, until it is completely absorbed.
Cover the bowl with a clean towel and leave the dough to rise, until it doubles in volume - about 1 hour.
While the dough is rising, prepare the cream according to the instructions on the starch package. I dissolve the contents in 2/5 cup (100 ml) of water, while the milk and sugar boil on the stove. Remove it from the heat and pour the starch gradually, then place it back onto medium heat and stir, until it thickens - 4-5 minutes.
Roll out the dough onto a floured surface into a rectangular crust, which is about 4 mm thick.
Spread it with the cooled vanilla cream and roll it up. Pull the ends to extend it.
With a very sharp knife, cut it into slices and arrange them lying at a distance in two trays covered with baking paper. Leave the cream pastries to rise for about 1 hour.
Spread the whipped egg white on the small cream pastries and sprinkle some of them with sliced almonds, others with walnuts, sugar pearls and colored sprinkles.
Bake the cream pastry rolls for 20 minutes or until they aquire a golden brown color in a preheated oven at 360°F (180 degrees).
