Ingredients

  • cheese - 17.5 oz (500 g), hard
  • oil - for frying
  • eggs - 2
  • flour - 4 tablespoons
  • beer - 1 cup
  • tomatoes - 3 mature, crushed to a puree
  • parsley - 1/2 bunch
  • black pepper - to taste
  • salt
  • basil - 2 pinches, dry
  • oil

How to make

Put the cheese for about 30 minutes in the freezer to tighten so it does not leak into the pan. Cut the cheese into medium-thick slices, preferably in the form of a triangle - neither too thin, nor too thick.

Beat the egg yolks, beer and flour into a batter, and add the egg whites that have been beaten to snow with black pepper and salt to it. Heat a pan with oil. Each piece is dipped briefly first in a bowl of ice water and then in the crumbing. The cheese is flipped on both sides to fry.

Serve this fried cheese on top of tomato sauce, prepared on a stove using the crushed tomatoes, oil and spices.
