How to make
The washed zucchini are cut into thick slices and are carved out from the inside, but without reaching the bottom.
Heat oil and butter in a pan, fry the finely chopped onion, grated carrot and allspice until they soften.
Pour the washed long-grain rice, fry it along with the carved out part of the zucchini and crushed pistachios.
Sprinkle with salt, add a glass of hot water and leave it on low heat to absorb the water.
Arrange zucchini boats in a baking pan and fill them with a small spoonful of stuffing.
If you still have stuffing left, put it in the baking pan, pour a glass of water and 1 tbsp. of oil.
Bake the delicious stuffed zucchini until the rice is ready in a moderately heated oven at 360°F (180°C) for 35 minutes.
Serve the oriental stuffed zucchini with a sprig of mint.
