How to make
Beat the egg whites well with a pinch of salt. In a separate bowl, combine the oats, ground hazelnuts, vanilla and sweetener.
Combine the two mixtures, by gradually adding the nuts to the egg whites.
Preheat the oven to 270°F (130 degrees) and prepare a tray covered with baking paper. Put spoonfuls of the mixture at a distance from each other and shape the cookies as desired.
Bake them for about 50 minutes and reduce the heat to 210°F (100 degrees) for another 10-15 minutes, then turn off the oven and leave the cookies inside until cool. This way they will dry well and become crunchy.
Store them in an airtight container, so that they do not soften.
