How to make
Bake the banana in the oven along with the peel for about 10 minutes at 300°F (150 degrees) (without a fan).
The chocolate for our keto cake is broken into smaller pieces and half the amount is melted in a water bath along with the coconut oil and erythritol. The amount is according to the desired sweetness. Erythritol is a multivalent sugar alcohol, a substitute for sugar, which has a slightly lower sweetness than it, but for me 2 tbsp. are enough, I don't like it to be too sweet, but rather to have a slightly sweet taste.
For the water bath you need two pots - a larger and a smaller one. Water is poured into the bigger one and the crushed chocolate is placed in the smaller one. Once the water in the large pot has warmed up, the small one is placed in it. Stir the chocolate periodically until it is completely melted, then add the coconut oil and erythritol and stir again for a few minutes. A sweetener of your choice can be used or not added at all.
Peel a banana and mash it with a fork, leave it to cool for a while and add the chocolate mixture to it. Mix well.
Beat the eggs by hand or with a mixer and add them to the already cooled mixture of chocolate and banana. Baking powder and almond flour are mixed and added to other products. Mix everything until the ingredients are completely mixed.
Cover a suitable small tray or form with a removable bottom with baking paper. Distribute the keto cake mixture evenly and place it in a preheated oven. If the tray is glass or ceramic, you can place it in a non preheated oven as well, it is not a big deal. Bake it for about 30 minutes at 360°F (180°C) without fan, by checking its readiness with a toothpick or wooden skewer.
During this time, prepare the cream for the cake by melting the remaining amount of chocolate again in a water bath. The procedure is the same as the first time. Once the chocolate has melted, add as much cream and erythritol as you like. I added 3 tbsp. Stir for a few minutes and remove it from the heat.
Pour the hot chocolate mixture over the cream cheese (or whole cottage cheese, ricotta) and mix very well until a homogeneous mixture is obtained. This is very easy to achieve with the help of a blender or food processor.
When the chocolate cake is ready, cool it completely and spread a lot of cream on all sides. Leave it to set in the refrigerator for a few hours. Then the diet cake is decorated with sliced almonds, crushed nuts or chocolate, whipped cream, etc. The photo shows only sliced almonds.
Note: You can skip adding sweetener, but in this case the prepared chocolate cake becomes quite bitter. It is suitable for high fat low carb diet.
