In a large bowl mix all the fruits and chopped ginger, orange juice, brandy and marsala /brandy/ rum. Let it stand for 1 night. Beat butter and sugar and gradually add 1 egg with 1 tablespoon flour.
Stir with all the eggs and flour and add all the spices. You should also add soaked fruit and juice and mix well. Finally, stir in the nuts, molasses and grated apple.
Prepare a taller baking tray with baking paper and gently grease it. Pour the mixture for this Christmas cake and then spread it evenly. Put to bake in a preheated oven at 300°F (150 °C) for about 3 hours, or until a when wooden skewer is stuck in the cake, it comes out clean.
When ready, remove from the oven and brush with apricot jam. Another option is to wash with a few tablespoons of brandy or rum. Prepare frosting according to package directions and pour it over the already cool Christmas cake.
