How to make
Heat the butter and olive oil and fry for a few minutes the finely chopped onions in them.
Add the flour and add a little finely chopped Spanish jamon. Fry them for a few more minutes.
Pour the milk and stir with a wire whisk to avoid lumps.
Boil the mixture until it thickens at a low temperature and season it with salt, black pepper and nutmeg.
Add the remaining jamon and finely chopped boiled eggs.
Transfer the mixture into a bowl and cover it with cling film.
Leave it to cool and refrigerate it for at least 8 hours.
Shape the mixture once it has set into long croquettes as big as a handful - moisten your hands beforehand.
Roll them first in flour, then in egg and finally in breadcrumbs.
Fry these delicious croquettes in a deep frying pan with heated fat until they aquire a golden color.
Serve them warm with mayonnaise sauce.
