How to make
Mix the warm milk with the yeast and sugar, stir until it has dissolved and leave it in a warm place until it activates.
Separately mix the grated cheese with the egg white and the finely chopped ham and mix well until a smooth mixture is obtained.
In a bowl sift the flour and add the salt, stir and form a well. Beat the egg with a fork and add it into the well along with the oil, warm water and activated yeast and knead a firm dough.
Divide the dough into 16 equal pieces and shape them into balls, roll out the balls into crusts as big as a saucer. Arrange the crusts in two piles (8 crusts each) by smearing between them with soft butter.
Cover them with cling film and a clean towel for 20 minutes. Roll out each pile into a large and thin crust, which you will then divide into 16 triangles.
On the wide side of each triangle put a little of the stuffing and roll them up into rolls.
Arrange them in a greased baking pan and spread them with the beaten egg yolk and milk.
Leave the croissants to double in volume for one hour, then place the baking pan in a preheated oven at 390°F (200 degrees) and bake them until they aquire a golden color.
