How to make
Place the cleaned fish whole into a pot. Add the diced onion, carrot, pepper and finely chopped parsley stalks.
Drizzle with olive oil and season with coarse salt.
Add 2-3 liters of water and bring to a boil.
Set the fish aside on a tray after 20-25 minutes of cooking. Allow it to cool and remove the bones carefully.
Add the peeled and diced potatoes and tomato to the boiling soup.
Once the vegetables are cooked, place the fish chunks back to the soup, and seaon with finely chopped lovage and black pepper. Taste the soup and season to taste.
Serve hot with freshly squeezed lemon juice.
