Ingredients

  • potatoes - 1.3 lb (600 g)
  • roasted red peppers - 4 pcs.
  • beans - 1 tin (white/red)
  • red onions - 1 onion
  • olive oil - by taste
  • balsamic vinegar - by taste (white or apple cider vinegar)
  • salt - 1/2 tsp.
  • chopped parsley - for sprinkling

How to make

The potatoes are cleaned, peeled and cut into large cubes. Put them in a pot with enough salted water and boil them until they're ready - about 20 minutes.

They are then strained. Pour them into a bowl.

Add the red peppers, cut into larger cubes, on top.

The beans, whether white or red, are rinsed under cold water, strained and added to the potato salad.

Add as much olive oil as you like, white balsamic vinegar and salt. Mix the potato salad.

This winter salad is sprinkled with chopped parsley.
