How to make
Peel the potatoes, wash and cut them into rings. Chop the leeks and fry them briefly in a hot olive oil with a little oil. Then add the finely chopped peppers, stir for 1-2 minutes and remove from the heat. Season it with salt, black pepper and a little oregano.
In a greased oven dish, arrange a row of potatoes, spices, half of the fried vegetables, another layer of potatoes, a little olive oil, spices, vegetables and potatoes again and a little olive oil. Pour 1 cup of hot vegetable broth over everything.
Put in an oven heated to 360°F (180 °C) to bake for 30 minutes. Remove and sprinkle with grated cheese and some breadcrumbs. Put it back to roast for 5-10 minutes.
