How to make
Cut the bacon, carrot, celery and onion very finely (or grind them in a blender for a while) and put them on a very low heat in a pan with a good amount of fat and fry them until they change their color.
Then add the minced meat and cook it, pour the wine and stir.
When the wine evaporates, add the tomatoes and simmer for about 1 hour and 30 minutes - 2 hours, by adding the broth, when needed.
Towards the end of cooking, add salt, black pepper, milk and add the cooking cream at the end.
The bolognese is ready for your tagliatelle.
