"Vegan vegetable guvec - we hands down recommend it"

Ingredients

  • potatoes - 4 - 5 pcs.
  • peppers - 2 pcs.
  • eggplant - 1 pc.
  • onion - 2 onions
  • carrots - 1 pc.
  • zucchini - 2 pcs.
  • garlic - 3 - 4 cloves
  • olive oil - 4 - 5 tbsp.
  • paprika
  • smoked paprika
  • black pepper
  • salt
  • parsley
  • dill
  • mint

How to make

Wash and chop all of the vegetables.

Sprinkle the eggplant with a little salt and put it in a colander for 30 minutes to release its bitter juice. Then wash it.

At the bottom of a clay pot put the onions and carrots first. Arrange the zucchini, peppers, eggplant and finally the potatoes on top of them.

Cut the parsley, dill and mint and sprinkle them evenly everywhere. Between each row of vegetables put a clove of garlic (finely chopped).

Heat 1 cup of water and dissolve 1 tsp. of salt in it. Add the remaining spices (paprika, black pepper and smoked paprika), stir and pour that over the guvec.

Finally, add olive oil (oil) and cover it with a lid or aluminum foil.

Put the guvec to bake in a non preheated oven at 390°F (200 degrees).

The baking time of the vegetable guvec is about 60 minutes, until the vegetables are ready. If you're using a clay pot, you will need a little more time.
