"Fresh, light and very tasty vegetable soup"

Ingredients

  • cauliflower - 1 head
  • soy sour cream - 5.3 oz (150 g)
  • leeks - 2.1 oz (60 g)
  • onions - 1.8 oz (50 g)
  • salt - by taste
  • olive oil - 3 1/3 tbsp (50 ml) + for sprinkling
  • vegetable broth - 3 cups (700 ml)
  • white pepper - 1/2 tsp.
  • parsley - stalks for decoration

How to make

Stew the onions and leeks in a small pot for a few minutes with olive oil.

Then add the chopped cauliflower and spices.

Pour the broth and boil for about 20 minutes.

Pour the soy cream and puree the vegetable soup.
