"Delicious baked potatoes with an even tastier filling - try them yourself!"

Ingredients

  • potatoes - 5 pcs, large and cooked whole
  • mushrooms - 7 oz (200 g) fresh
  • leeks - 1 stalk
  • olive oil - 4 tbsp.
  • mustard - 1 tbsp.
  • basil - to taste
  • black pepper - to taste
  • salt - to taste
  • yellow cheese - 3.5 oz (100 g)

How to make

Skin and cut the boiled potatoes in halves, lenghtwise. Scoop them carefully with the help of a spoon.

Heat the oil into a pan and add the the finely chopped mushrooms and leeks, season with black pepper an cook until the liquid evaporates.

Set aside, add the mustard and the finely chopped potatoes that were scooped out. Season with the herbs and spices and mix well.

Distribute the filling evenly into the potato shells and sprinkle with grated cheese.

Arrange the stuffed potatoes on a greased tray, preheat the oven to 390°F (200 degrees) and bake.

After about 20 minutes your Stuffed Potatoes with Leeks and Mushrooms should obtain a golden brown crust.
