How to make
Boil the quinoa for 10-12 minutes, strain it and leave it to cool.
Wash the lettuce leaves, dry them with kitchen paper and shred them.
Cut theyellow cheese or white cheese into large cubes - whatever you like. Peel the eggs and cut them into quarters.
Prepare a salad dressing by grinding the sun-dried tomatoes with olive oil, salt and balsamic vinegar. If the tomatoes are small, add more. Finely chop the spring onions and add them to the dressing.
Mix the quinoa and lettuce in a bowl and mix them with the dressing with spring onions and sun-dried tomatoes. Add more olive oil, vinegar or salt.
Transfer the seasoned quinoa salad into a suitable serving plate or bowl and place the yellow cheese cubes and egg quarters on top.
Sprinkle it with freshly ground black pepper and serve the quinoa salad with a dried tomato dressing.
