  • sour cream - 1 cup
  • cooking cream - 1/2 cup
  • flour - 1 cup with tip (white)
  • buckwheat flour - 1 cup with a tip
  • dry yeast - 2 tsp (10 g)
  • milk - 1 cup
  • eggs - 2 pcs.
  • sugar - 1 tbsp.
  • salt - 1 tsp.
  • oil - 3 tbsp.

How to make

The two types of flour are sifted into a bowl and mixed with salt. Make a well in the middle and pour the slightly warmed milk, sugar and yeast in it. Beat the mixture.

With dry instant yeast you don't have to wait for it to activate, do it, but only if you use live yeast.

In the well put both types of cream, lightly beaten eggs and oil. In some recipes, more fat is added, but in this case it is not necessary, because the cream is greasy enough.

Start mixing with a wooden spoon until you get a homogeneous mixture, thicker than a pancake mixture. It should be stretchy and smooth.

If there is too much resistance to stirring, add more liquid - milk or cream. If it's too thin, add a little flour - buckwheat or white wheat.

Cover the bowl with a clean towel and allow the thin blini batter to double in volume for about 30-40 minutes.

Grease a pan with a non-stick coating and heat it over a moderate heat. Add the mixture and shape it into a blini with a spoon. Bake it until it aquires a golden color on both sides.

Serve the delicious cream blini warm with a sweet or savory topping of your choice.
