Ingredients

  • potatoes - 4 pcs.
  • duck fat - 5 - 6 tbsp. (or oil)
  • paprika - 1 level top tbsp. (or smoked)
  • rosemary - 1 tbsp. (or by taste)
  • olive oil - to grease the baking pan
  • salt - by taste

How to make

Peel the potatoes and cut them into 0.5″ (1.3 cm) thick slices. If they are fresh, you do not need to peel them.

Arrange them in a baking pan greased with olive oil and with the tip of a sharp knife make on the surface of each potato rhombus shaped slits with a depth of 1-2 mm.

Sprinkle them with the duck fat if it is melted, or just put pieces of it on the potatoes if it is hard.

If desired, you can add more fat.

Add as much salt as you like and sprinkle them with paprika and rosemary and finally pour 1/2 cup of water on the bottom of the baking pan.

With it, the potatoes become softer. You can skip it, so that they have a crispier crust.

Bake them at 390°F (200 degrees) in a preheated oven until they aquire a golden brown color.

Serve the delicious and favorite potatoes warm.
