How to make
Prepare all the products by peeling the shrimp, cut the ham into thin strips, the zucchini into juliennes, the garlic into large pieces and the mushrooms into slices.
In a deep frying pan or wok, heat the olive oil with half of the butter and fry the zucchini with the fresh garlic first. Once they are almost done, add the mushrooms and the rest of the oil and cook them for a few more minutes until the mushrooms have softened and the rest of the vegetables are completely ready. The whole process takes no more than 12-15 minutes on medium heat.
Pour the wine and when it has almost evaporated, add the ham and shrimp and season with salt. Increase the heat briefly, for 1 minute and remove it.
Sprinkle with finely chopped parsley or fresh basil.
Serve the appetizer garnished with thin slices of the smoked scamorza.
