How to make
Cut the shallots and put them in butter and olive oil to fry. Once they soften, add the sugar and salt and stir until it caramelizes.
Pour the wine, wait for it to reduce and add the finely chopped coriander. Stir for a minute or two and remove it from the heat.
Preheat the oven to 390°F (200 degrees) and arrange the mussels in a baking pan. Put a spoonful of the stuffing on each one and sprinkle them with a spoonful of breadcrumbs. Sprinkle them with a little salt and put them in the preheated oven.
Bake them until they aquire a light golden brown color (about 10-12 minutes).
Serve the baked Saint-Jacques Coquilles warm, garnished with lemon slices.
