How to make
A good beef steak does not need heavy spices and marinades. The important thing is that the meat is of good quality.
Ask the butcher to make the steaks at least a finger and a half thick. You decide whether you want it to have a bone or not.
Allow the meat to rest for half an hour at room temperature before cooking it.
Heat a frying pan (grill or plain) on a high heat. Drizzle it with 1-2 tablespoons of olive oil and once it is very hot, put the steaks in it.
Bake the meat until it aquires a golden brown color (for more than a minute), then turn them over and bake them for 2 minutes on the other side. Only after turning them, sprinkle them with coarse flaky salt - only on the cooked side.
The flesh should remain slightly pink - red on the inside, in order for it to be more tender.
Serve the warm tender beef a la minute steaks and garnish them as you like.
