How to make
Wash and cut the pear into thin slices without peeling it. Use a harder one and by no means a soft one, so choose the right variety.
Carve the seeds from the inside of the pieces that have them.
Melt the butter in a pan with a non-stick bottom and arrange the slices of fruit, then sprinkle them with lemon juice and sugar and a pinch of salt. When the sugar starts to darken, reduce the heat and turn each piece over to caramelize on the other side. The pear should soften slightly, but remain slightly crunchy.
Remove the slices of caramelized pear and arrange them, by overlapping them on a plate.
Cut the roll of goat cheese - creamy on the inside and with a hard crust on the outside (or whatever kind you have) into thick slices.
Put them in the pan with the caramel mixture and seal them on both sides.
Arrange the goat cheese on the pears and pour the remaining caramel into the pan.
Garnish them with wild onion stalks, if desired and serve the dish warm.
