How to cook
In a bowl, beat the eggs with the sugar into a light fluffy cream. Add the vanilla, flour and baking powder and continue to beat the mixture a little more.
Cover a small round baking pan with a sheet of baking paper and pour the mixture into it.
Bake the cake layer at 360°F (180 degrees) for about 10-12 minutes. Take it out of the oven, leave it to cool and separate it from the paper. Place it in a form with a detachable bottom.
Beat the cream with the sugar. Add the strained yogurt and vanilla and beat the mixture by hand.
Pour the gelatin into water and stir. Let it swell for a while and heat it in the microwave or water bath to melt it.
Pour it into the cream and mix it very well, in order to mix everything. Pour the cream over the cake layer and flatten it out.
Wrap in foil and store in the refrigerator overnight.
Separate the parfait cake from the form.
Mix the raspberry jam with the water and heat it for 1 minute in the microwave. Leave it to cool. Pour this topping over the parfait.
Decorate the parfait with blueberries and chocolate sprinkles.
You can use other fruit of your choice.
