"A favorite for several generations and time-tested classic fruit cake from our old cookbook"

Ingredients

  • eggs - 4 pcs.
  • sugar - 1 and 1/2 cups
  • oil - 2/3 cup
  • flour - 2 cups
  • baking powder - 2 tsp (10 g)
  • baking soda - 1/2 level top tsp.
  • vanilla - 2 - 3 powders (4 - 6 g)
  • fruit - 3 cups (cleaned and diced)

How to make

The cake can be made with any fruit. However, when made with apples, instead of vanilla put 1/2 tsp. of cinnamon and 1 cup of crushed walnuts (optional).

Beat the eggs with the sugar until the mixture turns white. Add a little oil.

Add the flour in which the baking powder, soda and vanilla are placed. Add the fruit, which are washed and cut into small pieces (when made with cherries or sour cherries, remove their seeds and cut them in half).

Mix everything with a large spoon and pour the mixture into a greased and floured baking pan. Bake the cake in a preheated oven at 390°F (200 degrees) for 20 minutes or until it's fully baked (check with a toothpick).

When the fruit cake is ready, it peels off slightly at the edges of the baking pan.

The finished fruit cake is left to cool and is then cut into rhombuses and can be sprinkled with powdered sugar.
