How to make
Put the legs, tongue, ears, meat, bay leaf, black pepper in a deep pot and boil them over low heat until they're ready.
Take out the products, peel the tongue, debone anything that has bones and tear the rest into pieces.
Strain the broth, season it with salt, garlic and vinegar.
Put the boiled eggs in a bowl, add finely chopped parsley, chopped meat and pour the broth over the pork brawn.
Leave the pork brawn with boiled eggs in the refrigerator for a few hours before eating, in order for it to turn into jelly.
