Ingredients

  • flour - 1.1 lb (500 g)
  • yogurt - 1.1 lb (500 g)
  • baking soda - 1 tsp.
  • yeast - 1 1/3 tsp (7 g)
  • eggs - 1 pc.
  • sugar - 1 tsp.
  • salt - 1 tbsp.
  • milk - 4/5 cup (200 ml)
  • water - 2/5 cup (100 ml)
  • oil - 2 2/3 tbsp (40 ml)

How to make

Dissolve the yeast in 4/5 cup (200 ml) of warmed milk along with 1 tsp. of sugar and 3 tbsp. of flour. Mix well and let it double in volume for about 20 minutes.

In a large bowl sift the flour along with the salt.

In another bowl, pour the yogurt, before that add the soda and beat it into a foamy mixture. Add the egg, water and oil. Stir until you have a smooth mixture.

Sift the flour and add it gradually, while stirring gently with a wooden spoon, until the dough begins to form.

Sprinkle the countertop with flour and pour the mixture on it from the bowl. Knead until you have a soft dough.

Grease a deep bowl and transfer the finished ball of dough into it. Leave it to rise for 1 hour in a warm place, covered with stretch foil.

Heat more oil in a deep frying pan.

Divide the finished dough into balls. Grease each one of them with oil and gently pull them with your hands so that they do not tear.

Fry them until they aquire a golden color. Now you have the most fluffy mekitsi, just like grandma's!

Grandma's fluffy mekitsi can be eaten with powdered sugar, jam, chocolate or white cheese.
