How to make
Mix the coconut milk, essence, rum and condensed milk. Leave the mixture in the refrigerator.
Whip the cream until you have a fluffy mixture. Mix it with the coconut milk we left in the fridge - carefully with a silicone spatula.
You can put the coconut shavings in the mixture or just sprinkle them on top when serving. It's a matter of taste.
Transfer the dairy ice cream into a plastic box with a lid and leave it in the freezer to set overnight.
Take it out and serve the homemade coconut ice cream with a raspberry, strawberry or wild berries topping.
All combinations are great.
