Ingredients

  • apples - 2.2 lb (1 kg)
  • prunes - 2.2 lb (1 kg)
  • sugar - 2.2 lb (1 kg)
  • water - 17 fl oz (500 ml)
  • pectin - 1 tbsp.
  • lemon peel
  • vanilla

How to make

Remove the seeds from the prunes. Cut them in half.

Cut the apples into pieces, discard only the seeds.

Put the fruit in a large pot, pour the sugar, water, add the lemon peel and flavor with vanilla.

Put the pot on the stove and boil the fruit for about 40 minutes. Remove from the heat.

Blend and strain the resulting mixture through a strainer. Pour the fruit mixture back into the pot and put it over medium heat.

Stir the pestil until the mixture thickens and begins to leave marks on the bottom of the pot. Just before removing it from the heat, add the pectin. Pour the pestil in a mold of your choice. Allow it to cool completely.

Pour the cooled pestil onto parchment paper. Fold it and store it in a dry and cool place.

Of course, this is not the recipe for the real pestil, but more like the marmalade from years back, that was sold by the kilo.

The recipe had that name and I left it like that.

Try this pestil with prunes and apples and what you get is a very tasty apple and prune jam, which you will not stop eating!
