  • plums - 2.2 lb (1 kg)
  • apples - 2.2 lb (1 kg)
  • sugar - 2.2 lb (1 kg)
  • pectin - 1 tbsp.
  • water - 2.5 cups (500 ml)

How to make

The fruit are cleaned and cut into pieces. Put them in a deep pot and pour 500 ml of cold water. Boil them over medium heat until they soften - this is done in 45 minutes. Then everything is strained and filtered through a sieve.

A a thick paste should be obtained. Add the sugar and pectin, stir vigorously with a wire whisk. Put the pot back on the stove and boil the mixture for 25 minutes, while stirring constantly. When it starts to spray, reduce the heat and boil for another 45-60 minutes.

A thick mixture is obtained, which should fall like a ribbon from the spoon and is not runny. Pour it into dry jars and seal them with a lid. It can be poured into a mold and covered with greaseproof paper.

Leave it to set, then cut it and eat it. This pestil can be stored for up to 6 months in a dark and cool place. It is great and very tasty!
