One of the fastest dietary and healthy desserts are those with chia. They can also be offered as a healthy breakfast.
The coconut pudding with chia goes well with fresh fruit, fruit toppings or purees. I make it with mango, as this exotic fruit goes well with the coconut and complements it to perfection.
The coconut milk is mixed with the almond milk and beaten with a wire whisk, so that there are no lumps of precipitated fat from the coconut oil, which is usually collected on the surface of this milk.
Add chia and coconut shavings. Sweeten it according to your taste and leave it for 1-2 hours in the refrigerator to allow the chia seeds to swell up and release their gelling substances.
It can be checked after the first hour and if the coconut milk has set, it is beaten or stirred again.
Remove the already firm pudding from the refrigerator and make a quick mango fruit puree.
The fruit is cut and placed in a blender with the coconut sugar. Blend it into a smooth puree and distribute it at the bottom of small cups or jars.
Add the delicious pudding and garnish it with mango pieces on top.
* We do not use coconut sugar as a sweetener for the pudding itself, because it is dark and will change its color, but in the puree there is no problem if it makes the mango darker.
