Ingredients

  • broccoli - 7 oz (200 г)
  • onions - 1.7 oz (50 g)
  • garlic - 1 clove
  • olive oil - 3 1/3 tbsp (50 ml)
  • eggs - 2 pcs
  • flour - 4.2 oz (120 g)
  • baking powder - 1 tsp.
  • nutmeg - 2 pinches
  • black pepper - 1 pinch
  • salt - 2 pinches, or to taste
  • milk - 3.4 fl oz (100 ml)
  • feta cheese or blue cheese - 3.5 oz (100 g)
  • oil - for frying

How to make

Buñuelos are fried dough fritters, traditionally prepared with flour, eggs, milk, and baking powder. You can add all kinds of fruit or vegetables, depending on the kind of fritters you are making - sweet or savory.

Very popular in Spain and South America. The ones with butternut squash are everyone's favorite, most often cooked around Easter.

In this recipe I am presenting a savory variation with brocolli. These bunuelos can be served as a vegetarian meal, a starter, or as tapas. Ideal if you want to serve something tasty and impress your guests.

Please follow my recipe:

Chop the onion and garlic and saute at moderate heat for 5 minutes.

In the meantime wash the brocolli rosettes and blend in a blender on medium speed - to achieve granules, but not a paste.

Add the broccoli to the onion and saute for 5 minutes stirring constantly. Set aside and allow the brocolli mix to cool a little.

Whisk the eggs with salt and pour in the milk, crumbled cheese, flour, baking powder and spices.

Combine the batter with the vegetables and stir.

Heat the oil into a deep frying pan and fry the bunuelos, with the help of a spoon. Flip them over to a chieve a golder crust on both sides..

Place the cooked bunuelos on a plate with kitchen paper to absorb the excess oil, and serve.

You can serve with yogurt sauce, garlic sauce, or cheese sauce (if your fritters contain blue cheese, you can also prepare a blue cheese sauce)
