How to make
Roast the shrimp in a pan with a little olive oil. As soon as they change color, immediately remove them and fry the garlic cloves whole in the same fragrant olive oil over low heat. When they release their aroma, remove them and remove the pan from the heat.
Boil the spaghetti, by following the instructions on the package for al dente. They must remain a bit more hard, as they are going to be fried.
During this time, peel the shrimp, set them aside and place the heads back into the pan and place them over medium to high heat. Once the olive oil begins to heat up, pour the wine and cook until it's reduced by almost half.
Strain the prepared spaghetti well and add the butter, while stirring them until it melts and the pasta absorbs it. Pour them into the pan with the wine and olive oil (from which you have previously removed the heads) and fry without stirring, but just turn them by tossing them slightly and holding only the handle of the pan.
After a minute, add the parmesan, making the same movements and after another minute add the shrimp and olives in large pieces. After two or three tosses in the pan, remove it from the heat.
Serve the fried spaghetti sprinkled with finely chopped fresh basil leaves and optionally with more Parmesan.
Eat the fried spaghetti with shrimp warm.
