How to make
The chickpeas are soaked in water from the night before. The water is changed and boiled for at least an hour and a half.
During this time, prepare the vegetables. The leeks and carrots are cleaned and cut into circles. The peeled garlic is finely chopped.
Put the vegetables in a pan and stew them with a little fat and water. After stewing them, add the cleaned and finely chopped peppers. When they soften, add the tomatoes. If you do not have fresh ones, canned ones can be used.
It is time to add the spices - salt, hot paprika, turmeric, ginger, coriander, black pepper. The dish is stirred and added to the chickpeas.
If there is a lot of chickpea water, pour it out in advance and if it is too little - add warm water to the desired density.
The stew is boiled for another 10-15 minutes.
Serve it sprinkled with fresh parsley.
