"A meatless, Italian-style potato soup - there`s no way you wont like it."

Ingredients

  • oil - 5 tablespoons
  • leeks - 3 stalks
  • onions - 1 head
  • carrots - 1
  • potatoes - 17.5 oz (500 g)
  • tomato juice - 2 tablespoons
  • garlic - 4 cloves
  • parsley
  • salt

How to make

Fry the finely chopped leeks, onion and carrots in oil. When golden, add 6-7 cups of hot water, salt and put the diced potatoes, tomato sauce and garlic cloves in.

Boil and serve the soup with fried bread cubes or chopped parsley.
