"This recipe is a guide to the perfect potato soup"

Ingredients

  • potatoes - 2 lb (900 g) (6 medium - sized)
  • carrots - 1 large (100 g) coarsely grated
  • onion - 1 medium - sized onion (60 g)
  • sea salt - finely ground
  • paprika - 1 tsp.
  • crushed ginger - 2 tsp. (dried)
  • butter - and oil
  • noodles - 1 and 1/2 balls (handfuls)
  • parsley - 1/2 bunch
  • For the thickener
  • yolks - 2 pcs.
  • flour - 1/2 tbsp.
  • yogurt - 4.6 oz (130 g)

How to make

I peeled the potatoes, washed them and cut them into very small cubes, no bigger than 0.4x0.4″ (1x1 cm). I washed them, because they release starch, which creates foam when they're boiled, but you can skip this step.

During this time, I heated 10 cups (2.5 liters) of water in a pot.

In the large pot in which I will cook the potato soup, I heated 3 tbsp. of oil and 1 tbsp. butter. I added the onion, the carrot, the finely chopped parsley stalks, salted and cooked, until they softened and the carrot released its beautiful color.

Then I added the potatoes, mixed them and after about a minute I salted them, sprinkled them with parsley and paprika. I stirred again and after another 1 minute added all the boiling water. I boiled the autumn soup for about 25 minutes, or until the potatoes softened.

Heat level was 4 out of 6 on my stove and the pot lid was slightly ajar. When the potatoes were fully cooked, I added the noodles, stirred to break them apart and boiled for about 4-5 minutes, or until they became slightly swollen, but without boiling the potato soup. This time may vary depending on the noodles.

During this time I prepared the thickener by putting the two egg yolks, a pinch of salt and the flour in a bowl and turning them into a smooth mixture with a wire whisk.

I added the yogurt and stirred, until it was absorbed. I added 2-3 ladlefuls of the broth to the hot soup and stirred. I then poured the mixture from the bowl into the pot and stirred. As soon as the soup boiled, I boiled for 2-3 minutes and removed it from the heat. I added a piece of butter and finely chopped parsley and gave it a final stir. I served it warm.

I make larger quantities, but if you are cooking for 1-2 people, you can reduce the products by half.

For this ordinary potato soup, it is important that the potatoes are ordinary potatoes. New potatoes are not suitable for this soup. I have shared that I order vegetables from a lovely lady, but this time I forgot and found these at the store. They turned out to be amazing.
