Ingredients

  • einkorn flour - 1.1 lb (500 g) whole grain
  • lukewarm water - 2 cups
  • baking soda - 1 level top tsp.
  • himalayan salt - 1 level top tsp.
  • apple cider vinegar - 1.5 tbsp.
  • yogurt - 3 tbsp.

How to make

Pour the flour and salt into a bowl and mix them well.

Separately, put the baking soda and pour vinegar over it. Stir well. Add the yoghurt and stir again until the mixture foams up

Use high-fat yogurt or a homemade one, if you have one.

Pour it in the flour and start stirring with a spoon and gradually adding the water. The dough does not need to be kneaded - it becomes thick and sticky.

Pour it into a baking form covered with baking paper or greased with oil and sprinkled with flour. Smooth out the dough with a wet spoon or by hand to get a smooth crust.

Bake it in a preheated 360°F (180 degree) oven for about 60 minutes. If you want the bread to have a softer crust, put a bowl of water in the oven.

When it is ready, take out the bread, spread it with water and wrap it with a towel.
